This light and refreshing cucumber sandwich is perfect for a hydrating lunch on a sunny day or just as a quick snack. The crisp cucumber is complemented by a flavorful yogurt-cream cheese mixture. All held together by delicious whole wheat bread.

Honestly I love cucumber sandwiches. They’re quick, easy, refreshing and in fact very versatile; you can add tomatoes, bacon or chicken to spice up this lovely dish.

Either way you get a little bit of extra hydration and, according to some studies, you may even get help in preventing cancer from some compounds found in cucumbers.

Tips: Storage

Cucumber: Place in ziploc bag in store inside fridge.

Dill: letting your yogurt mixture sit for a few minutes can help bring out the flavor of the dill more.

Meal Prep: Wrap sandwich in Plastic wrap and place in fridge overnight.

What you’ll need for this refreshing cucumber sandwich:

Cucumber: English Cucumbers are the best option but you may use any type of cucumber you please. In fact we didn’t have any English Cucumbers at the time we made this recipe, so we just used an average cucumber from our local grocery store.

Wheat Bread: You can use any whole grain bread you prefer.

Cream Cheese: You use a dairy free or vegan option just be sure its soft at room temperature and blends well with your yogurt.

Plain Greek yogurt: This will be your source of protein in this dish. I personally use Choboni zero sugar as it is the recommended brand for diabetics and does not raise blood sugar. You can use a plant based yogurt in place of choboni.

Dill: this will provide a much needed tanginess to your yogurt mixture which will enhance your dish a lot.

Black Pepper: Adds more flavor and helps your dish to not appear boring visually.


Recipe

Prep time 10 Min

Ingredients:

2 oz Cream Cheese (room temperate)

1 tbsp Plain Choboni Zero sugar Greek Yogurt

1 tbsp chopped Dill

2 slices of Whole Wheat Bread

Half of Cucumber (peeled and sliced)

Instructions:

1. Place Yogurt, Cream Cheese, Chopped Dill, and Pepper in a small bowl. Mix until well blended.

2. Evenly spread mixture onto each slice of bread. Cover any remaining mixture with plastic wrap and place in fridge. Evenly pile cucumber slices on one slice of bread in two layers. Top with remaining bread slice.

3. Cut off crust from all sides. slice diagonally. Enjoy.
